There are a few Individuals in the tree who were soldiers. Records indicate their participation in historical battles but unless they died on the field, there isn't an obvious place for this in the standard GEDCOM events. I suppose a custom event can be shaped for this but I was wondering if other users specifically do this already? Would they be willing to share their approach here?

GEDCOM v4.0 had the MILI tag. webtrees understands it and translates it. At least you can fill it with dates and places like most other events, and ofcourse you can add notes & sources to it. You can add it to your full list of supported fact/event types for individuals in the control panel.
An example from my own tree (alas with the details filled in Dutch) of a participant of the battle at Waterloo:
stamboom.bertkoor.nl/individual.php?pid=I289&ged=BertKoor

Otherwise you can always resort to custom events.
stamboom.BertKoor.nl runs on webtrees v1.7.9

One approach I take is to create a shared note (say, 'WW1 soldier), and then attach this shared note to all individuals that participated in that particular event. Then you can view all WW1 at a glance by going to the note directly.

Basically, I create a custom event like "Battle of Fishdam" & "Battle of Hanging Rock"
Easily copied & pasted.
