How can I make a superscript character like this in my webtrees note fields?

What about a strikethrough or subscript

Is there any reference that will explain that?

That is the right starting point, I already went through that And several other guides on markdown. From start to finish, I am new to it, but I have gone through it and haven't found anything to help.

I saw some comments to use a "SUP" tag around it with <> but I haven't been able to get them to work in the note fields.

Usually markdown supports embedded html.
So try indeed:
 superscript text
stamboom.BertKoor.nl runs on webtrees v1.7.9

I have tried that as well as trying sup in square brackets.

Not working for me. Here is an uexample: Shared Note N5

So it begs the question, is the code broken in the note markdown or are superscripts not supported.
Or is my syntax wrong?

As far as I can tell, sub/super-scripts are not part of the markdown specification.
