My family is Indonesian. We don't have a last name. My family has patronymics (Like they do in Iceland and the Middle East). How do you deal with this in webtrees?
Do you put a patronymic in the last name field... or do you leave it open?

In Norway for those people that did not have an inheritable surname I entered the name as along string without surrounding any name part with the “/“. For example:
1 NAME Olaf Hanson Naustdal
Where Olaf is his given name, Hanson is his patronymic name, and Naustdal is his farm name.
That's all good to know, but in webtrees you get a form to fill in the name parts. What Ken showed is the raw GEDCOM code used under the hood. But it is the same as the content of the very first name field in the form which you can only access with the small button next to it.
Depending on a setting some parts are pre-filled when you add a parent or child.
Visit the Control Panel - Preferences of your tree. Near the bottom you find the Surname Tradition.
I suggest you first do some tests with Icelandic (patrymonial) and None.
As Bert mentions, there are a number of naming customs.
The most common Javanese custom is with -putra ("sson") for sons and -putri ("sdottir") for daughters.
Another custom is plain Arab. ibn [father's name] for sons and bint [father's name] for daughters.
