The source citation is a one-line field.
Markdown was added to the multi-line fields (source transcript, notes).
Citations are (according to the spec) supposed to have the format "Key: value, ....". e.g.
"Volume: 45, Chapter: 2, Page: 45"
I'm not sure it makes sense to format these.

I mean the the field literally labelled 'Text' - the one where the help says 'In this field you would enter the citation text for this source ...'
