In NL we have surname prefixes like "van der" or "op de".
With those prefixes something goes wrong in the latest version 1.7.2.
See the added picture.
There is a father named "Lieuwe van der Pol", with a number of sons I was adding. (picture marked (1) )
If you look at father's name, the prefix "van der" is in the correct field (picture marked (2) )
If I add another son, the first part of the prefix "van" remains in the correct field , but the second part "der" shows up in the surname field. (picture marked (3) )
So that's wrong I think.

Next (without a picture), when I add a wife to the added son, the name "van der Pol" is not added to the married name of the wife.
That's wrong too and related to this prefix. Because if I remove the prefix from the name of the son, his new wife gets the Married name "Pol".
It used to work fine, so something changed!

Did you choose "paternal" or "patrilineal" surname tradition?

Patrilineal gives the surname to the child.

Paternal also gives it to the wife.

I tried the fix and that solved the split prefix-thing.
But there is still the issue that if I add a wife to a male with a surname prefix like in my example, the wife will not get a married surname of her husband.

Paternal.
If I remove the prefix, the man's name is given to the wife as married name.

Not sure if this is in any way related, but I have stumbled across what looks like a name prefix issue that actually seems to trip up the UI of the edit name window

See screenshot attached

This shows data from imported GED file supplied by a relative - and obviously while the fields have not been populated correctly, it should be possible to edit and correct them.

A corresponding problem with the database is not identified when doing a Check for Errors in control panel

Presume the referenced fix will be included with next update

If I download the latest GitHub webtrees version and extract just the latest editinterface.php and substitute this for the one I am currently using (without updating any other files), am I likely to break anything?

You can't generally mix and match files like this.

Either make just the changes in the one edit or use all the files.
