Is there a way to force visitors to the log in page and not display any of the family tree info unless the log in successfully?

Sure, but why? You will never be able to help unknown relatives discover your site and offer to collaboratively contribute.
Set the privacy on the modules you load on the welcome/home page to members only.
Or, set up a separate login page through your DNS (set login to home).

Lots of various examples contained in the knowledge base. Search a bit.

Control Panel - Family Trees - Privacy
"Show the family tree" can be set to "Show to members" instead of visitors.
Then your tree is private and login is required.

But I ditto what Stephen said, this way you will miss all visitors you don't know yet are interested in your site.
webtrees can hide data of living individuals (optionally extended to x years after their death) so privacy should not really be a concern.
Usually all data exposed this way is already publicly available, but not in a convenient way like webtrees provides.
